Lasagna Roll Ups

We LOVED this recipe! I seriously am considering serving this up for guests! It looks beautiful and tastes delicious and is pretty easy (but looks fancy!)! Love it!!!!

Ingredients
6 lasagna noodles
3/4 C ricotta cheese
1/2 tsp minced chives
1/2 tsp dried oregano
1/2 tsp dried basil
24 (ish) slices pepperoni (I used hormel turkey pepperoni! sooo good! and less fat)
3 slices swiss cheese, cut up
1 C meatless spaghetti sauce
1/4 C shredded Parmesan cheese

Directions
Cook the noodles according to package directions; drain. Combine the ricotta cheese, chives, oregano and basil; spread 1/4 C over each noodle to within 1/2 in. of edges. Top with the pepperoni and swiss cheese; carefully roll up.

Place seam side down in a greased shallow baking dish; top with spaghetti sauce. Cover and bake at 350 degrees for 20-25 minutes or until bubbly.

Sprinkle roll-ups with the Parmesan cheese. Let stand for 5 minutes before serving.

  2. Thank you for writing on my blog! That is a great question :) I find, especially with cooking, that a lot of things can be substituted! You cook with what you got in your pantry :) So I always love to try new twists with a recipe!
    I have not made a seafood roll-up or used ALfredo sauce before. So I needed to do some research. I found an awesome recipe similar to mine, using Crabmeat! Yum! Hopefully you are not opposed to crab because I find it is a delicious sweet and tender meat that compliments a lot of dishes well. And you don't always need to buy it from the fresh/ frozen section. Look by the tuna cans in your grocery store and you can find canned crab! Which I think would work with this dish because there is a lot more than crab going on! Plus, it's cooked and ready to be used!
    Here is the recipe I was talking about, courtesy of food.com :

    Ingredients:

    8 ounces imitation crabmeat
    1 cup light ricotta cheese
    ¾ cup parmesan cheese , grated
    1 egg
    1 tablespoon dried parsley flakes
    ½ teaspoon onion powder
    6 lasagna noodles , cooked,rinsed & drained
    1 (15 ounce) can pasta sauce (if you can find it use the shrimp/crab sauce)

    Directions:

    Combine all the ingredients except the lasagna noodles and the pasta sauce.

    Mix well.

    Spread 1/3 cup on each noodle and roll jelly roll style.

    Place, seam side down in an 8" oven proof dish.

    Pour the pasta sauce over the roll ups and bake, lightly covered, for 25 minutes in 350F oven OR Cover with wax paper and microwave on high for 7 minutes.

    Now, you mentioned an Alfredo sauce too. I am not quite sure the Ricotta, Parmesan, and Alfredo will mix (it may be too overwhelming), but really, cooking is all to taste. So if you like it, Go for it! I would use the Alfredo instead of the "can of pasta sauce" to put on top of the roll ups.
