Crock Pot Lasagna

Ingredients
1 lb. ground beef (or ground turkey/ or chicken)
29 oz can tomato sauce
8 oz pkg. lasagna noodles, uncooked
4 cups shredded mozzarella cheese
1 1/2 cups cottage cheese

Directions
1. Brown the ground beef in a pan with a little oil.
2. Add chopped onion and garlic to the ground beef
3. Stir the tomato sauce in with the ground beef
4. Spread 1/4 of the meat sauce on the bottom of the crock-pot
5. Arrange 1/3 of the uncooked noodles over the sauce (I usually break them up so they fit better)
6. Combine the cheeses in a bowl. Spoon 1/3 of the cheeses over the noodles.
7. Repeat these layers twice
8. Top with remaining sauce
9. Cover and cook on low for 4hrs (I've started the crock-pot on high in the morning before I leave for work and then put it on warm when I leave and it's perfect when I get home)
10. Let the lasagna stand in the crock-pot with the lid off for at least 10 minutes 

* Variations *
1. Use Italian sausage in place of ground beef or with ground beef
2. Add 1/2 cup grated Parmesan cheese to the cheese mixture. Replace cottage cheese with Ricotta.
3. Add 1/2 cup additional shredded mozzarella cheese to the top of lasagna 5 minutes before serving

Lasagna Roll Ups

We LOVED this recipe! I seriously am considering serving this up for guests! It looks beautiful and tastes delicious and is pretty easy (but looks fancy!)! Love it!!!!

Ingredients
6 lasagna noodles
3/4 C ricotta cheese
1/2 tsp minced chives
1/2 tsp dried oregano
1/2 tsp dried basil
24 (ish) slices pepperoni (I used hormel turkey pepperoni! sooo good! and less fat)
3 slices swiss cheese, cut up
1 C meatless spaghetti sauce
1/4 C shredded Parmesan cheese

Directions
Cook the noodles according to package directions; drain. Combine the ricotta cheese, chives, oregano and basil; spread 1/4 C over each noodle to within 1/2 in. of edges. Top with the pepperoni and swiss cheese; carefully roll up.

Place seam side down in a greased shallow baking dish; top with spaghetti sauce. Cover and bake at 350 degrees for 20-25 minutes or until bubbly.

Sprinkle roll-ups with the Parmesan cheese. Let stand for 5 minutes before serving.

Easy One-Pot Lasagna

Ok. I get my recipes from every where... family, friends, online... coupons?!? Yes! Even coupons have sources! I had this coupon for a tomato sauce that contained omega-3 and a bunch of other healthy stuff, and attached to it was a recipe for One Pot Lasagna! After reading through the recipe, I thought it was worth a shot, and found it, It was a winner!!!!! My husband had multiple servings and even offered to have me cook this for him if I had to leave town and I didn't want him to starve/ eat unhealthy... wow, how kind of him? hehe I don't mind! This recipe DOES use one pot (well, one pot and a cauldron to cook with... but I don't mind washing the cauldron. But this recipe also uses a pan to cook the lasagna in... ah, but one pot I guess is technically correct!)Needless to say, the cleaning isn't so bad, and neither is the cooking. Chalk one up for recipes found on coupons! This one is a winner with us!

Preparation time: 15 minutes
Cooking time: 30 minutes

Ingredients:

12 ounces NO YOLKS (prefer Dumplings)
1 ½ tablespoons unsalted margarine
1 ½ tablespoons flour
1 cup fat-free half-and-half or milk
½ teaspoon salt (if desired)
¼ teaspoon pepper
½ teaspoon crushed dried oregano
1 cup reduced-fat ricotta cheese
1/2 cup shredded Parmesan cheese
¼ cup liquid egg equivalent
1 cup Healthy Pasta Sauce (Francesco Rinaldi ToBe Healthy Tomato & Basil)or any kind of pasta sauce
2 cups spinach
1/4 cup red onion, diced
1/2 cup mushrooms, diced (optional)
1 cup shredded, reduced-fat mozzarella cheese

Preparation:

Preheat oven to 350 degrees. In large pot, cook NO YOLKS according to package directions. Drain into colander.


In the same pot, melt margarine. Stir in flour to form a paste.
Gradually stir in half-and-half (or milk) over low heat, until mixture thickens. Stir in salt, pepper and oregano. Stir in ricotta cheese, Parmesan cheese and liquid egg equivalent.


Stir in cooked NO YOLKS. Remove from heat.


Grease a large, casserole dish, about 10 inches in diameter (or 8" x 8" square). Spoon in No Yolks mixture.


Bake for 10 minutes. Remove from oven. Spread ToBe Healthy Pasta Sauce over noodle layer. Add spinach, onion and mushrooms to top. Sprinkle on mozzarella cheese.


Return casserole to oven and bake an additional 20 minutes or until cheese melts and casserole is set. Remove from oven. Set aside 5 minutes before serving.

Yummmmm! Healthy AND easy clean up!

Makes 6 (approx. 1-cup) servings
