Ingredients:
2 (8 ounce) package imitation crab
3/4 cup mayonnaise
2 teaspoons lemon juice
1/4 cup green bell pepper (finely chopped)
1/4 cup onion (finely chopped)
salt and pepper (to taste)
paprika (to taste)
spinach leaves
4 wheat crescents
Step 1: Break up the crab into small chunks. You can do this with your hands or use two forks to shred the imitation crab meat. Place crab into a medium bowl. Add mayonnaise, lemon juice, green bell pepper, and onion. Season with salt and pepper and paprika. Mix until well combined.
Step 2: Place lettuce onto the bottom half of a bun (I prefer mine toasted), top with crab mixture and the top half of the bun.

Chicken Salad Sandwich
I don't know if Chicken Salad Sandwich is deemed a "Southern thing", but honestly, I had never heard of them till I moved to the South. This could be because when I was growing up, Tuna Sandwich was my FAVORITE. And since they are almost the same thing when you think of it, may be my mom just stuck with the tuna and didn't bother with the other.
Well, Husband LOVES Chicken Salad Sandwiches every now and then, so it was time to learn what was in this mix. I made it up as I went along, and really, it was tasty! I can see the appeal :)
Ingredients:
shredded chicken (I used a leftover 1/2 of a whole chicken we had last night for dinner; I just picked off the chicken and threw away the bones)
mayonnaise
sweet relish
dijon mustard
parsley
garlic poder
salt and pepper
chopped celery
diced onions
Directions:
Add all ingredients (to your taste) to bowl and stir till well blended. Serve on a croissant (traditional) or any bread (as I did!).

Buffalo Chicken Sandwich
When we were in college, a fun weekly event was Wednesday WING NITE, when wings were discounted and proved to be a delicious, cheap get-together with friends! Every now and then, my husband and I drool over those silly college cravings but oh buddy, THIS recipe will leave those wings in the dust!
I introduce to you... WINGLESS WEDNESDAY: Buffalo Chicken Sandwiches!!!!!!!!!!!!!!!

1 bottle Frank's Wings Buffalo Sauce
1 packet Ranch Dip Mix
2 TBSP butter
Put frozen chicken, wing sauce, and ranch dip mix into crock pot.
Cook on low at least 6 to 7 hours
Using two forks, shred chicken & return to crock pot.
Add butter.
Cook on low for an additional hour.
I made this recipe with two chicken breasts and lessened up on the sauce and butter when cooking, and it turned out to be the perfect portion for 4 whole sandwiches. We didn't eat our 4th sandwich though... we were so full! So husband ate it for dinner the next night! Works for me!!

| Add the chicken (frozen is ok), hot sauce, and ranch packet to the crock pot. Cook for about 7 hours on low. |

| When about an hour is left, take the chicken out and shred using forks. It should come apart easily, and if not, then just let it cook a little longer in the crock pot. |

Salmon with Dijon sauce Sandwich

Sorry about the steam! It was a fresh off the grill kind of meal!
Here's a quick dinner sandwich I made using salmon Patties (frozen, from Costco) and left over Dijon sauce.
ingredients
Salmon Patties (frozen)
1Tbs butter
Leaf spinach
Dijon sauce (see recent post for recipe)
Sliced onion pieces
Bun/ roll
Directions
In a pan, melt butter. Then place in patties and cook according to packaging (about 5 min each side). Then place on bun when done, adding dijon sauce and onions and spinach to taste. Serve with sweet potato fries for a healthy take on burgers and fries!
We both loved this meal. I waS inspired by Jason's Deli who has a salmon-wich that looked good. And I loved getting another use out of the dijon sauce! It was simple and easy. And definitely a good base for future sandwich recipes!
