Puppy Chow

This is another great recipe for a home-made snack/dessert for guests! Most people know it as "puppy chow" and it is YUMMY! My secret? I double everything except the Chex (so double the yummy chocolate peanut butter stuff on every piece!) Want another secret? I stick them in the freezer for storage! It makes the pieces so refreshing when you bite into them... you must try!

Ingredients
9 cups Rice Chex®, Corn Chex® or Chocolate Chex® cereal (or combination)
(ps, 9 cups = about a whole regular size box)
2 cup semisweet chocolate chips
1 cup peanut butter
1/2 cup butter or margarine
2 teaspoon vanilla
3 cups powdered sugar

Directions
1. Into large bowl, measure cereal; set aside.
2. In 1-quart microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
3. Add powdered sugar. Seal bag; shake until well coated.

Spread on waxed paper to cool. Store in airtight container in the freezer.

When my husband and I had to go out of town without Bentley, we had a wonderful family take care of him. So I made a batch of Puppy Chow and gave each of the little girls that took care of Bentley, their own personal bag. With a Thank You note, of course!

And as a little joke to our good friend, I decorated the Dad's Puppy Chow bag... a little extra "girly"... He was such a good sport!

Cinnamon Sugared Pecans

This is a recipe I always have up my sleeve. It is Great for snack-y presents to friends and house guests! I especially like to use Georgia Pecans; It's a home-y present that tastes DELICIOUS!!!!!

Cinnamon Sugar Pecans

2 egg whites
1/2 tablespoon vanilla extract
1/2 tablespoon water
1 pound pecan halves
1 cup sugar
1 tablespoon cinnamon
1/2 teaspoon salt



Preheat oven to 250 degrees Fahrenheit. Line a baking sheet with parchment paper or a silpat.

In a gallon sized freezer bag mix together the egg whites, vanilla extract, and water. In a separate gallon sized freezer bag mix together the sugar, cinnamon, and salt. Add pecans to the bag with the egg white mixture. Seal the bag and shake around the pecans until they are evenly coated. Transfer the coated pecans to the bag with the sugar mixture.
Seal the bag and shake around until the pecans are evenly coated with the sugar mixture. Spread the pecans on the prepared baking sheet.
Bake for one hour, stirring every 15 minutes. Cool completely before serving.

Pumpkin Pie Filling

Ingredients

1 (15 ounce) can pumpkin
1 (14 ounce) can Sweetened Condensed Milk
2 large eggs
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 (9 inch) unbaked pie crust

Directions

Preheat oven to 425 degrees F.
In a medium pan over low heat, heat up the canned pumpkin puree, spices, and salt. Then, pour the mixture out into another bowl, and let it cool a bit before adding the condensed milk and eggs. Whisk together all in medium bowl until smooth. Pour into uncooked crust. Bake 15 minutes.
Reduce oven temperature to 350 degrees F and continue baking 35 to 40 minutes or until knife inserted 1 inch from crust comes out clean. Cool. Garnish as desired. Store leftovers covered in refrigerator.

By heating up the pumpkin mix first, you make a big difference in taste - Heating the pumpkin puree up takes out the "canned" taste of the pumpkin and melds the spices together nicely. This little change makes the pumpkin taste much fresher too!

Sausage, Apple and Cranberry Stuffing

Ingredients

1 1/2 cups cubed whole wheat bread
3 3/4 cups cubed white bread
1 pound ground turkey sausage
1 cup chopped onion
3/4 cup chopped celery
2 1/2 teaspoons dried sage
1 1/2 teaspoons dried rosemary
1/2 teaspoon dried thyme
1 Golden Delicious apple, cored and chopped
3/4 cup dried cranberries
1/3 cup minced fresh parsley
1 cooked turkey liver, finely chopped
3/4 cup turkey stock
4 tablespoons unsalted butter, melted

Directions

Preheat oven to 350 degree F (175 degree C). Spread the white and whole wheat bread cubes in a single layer on a large baking sheet. Bake for 5 to 7 minutes in the preheated oven, or until evenly toasted. Transfer toasted bread cubes to a large bowl.
In a large skillet, cook the sausage and onions over medium heat, stirring and breaking up the lumps until evenly browned. Add the celery, sage, rosemary, and thyme; cook, stirring, for 2 minutes to blend flavors.
Pour sausage mixture over bread in bowl. Mix in chopped apples, dried cranberries, parsley, and liver. Drizzle with turkey stock and melted butter, and mix lightly. Spoon into turkey to loosely fill.

Easy Gravy

Ingredients:
1 quart of Trader Joe’s organic low sodium chicken broth
1 large onion, roughly chopped (next time, I will use 2 like she suggests in her recipe)
1/2 tsp of dried thyme (or a few good shakes of Fines Herbes seasoning)
2 tablespoons of Kerrygold unsalted butter (or pan drippings)
6-8 cloves of peeled garlic (I love garlic and that’s how many come pre-peeled in a little pack)
salt and pepper to taste
1 tablespoon of coconut aminos
A splash of heavy cream (optional)

Directions:
I dumped the onions, garlic, broth, and thyme into a medium saucepan and brought it to a boil on high. Then, I lowered the heat to low and let it simmer for ~30 minutes or until the onions and garlic are really soft. At this point I tasted for seasonings and added salt, pepper, and coconut aminos.
Then, I poured everything into my Vitamix (most AWESOME blender ever), added 2 tablespoons of butter (or pan drippings), and blitzed everything until it was uniform. You can also add some heavy cream if you want a creamy gravy. Definitely, use 2 or more onions because my sauce was pretty thin. It was really tasty (even with pantry items) so I’m keeping a container in the fridge to ladle onto whatever other meats/veggies I eat the next few days.

Yarn Wreath

Before we ditch autumn to celebrate (my favorite!!) Christmas holiday, I wanted to share with you a simple craft: a Yarn Wreath. This was one that I found on www.pinterest.com and just HAD to try! It was a bit time consuming, but I liked the final product :)


I created my own foam wreath by buying some outdoor pipe insulation from Home Depot (cost about $4 with tax) and that gave me about 4 tubes to work with. I just took one, cut it a little, and duct taped it together. Then, you start the wrapping of string. This took forever in my opinion (you have to physically take the ball of yarn in and out of the wreath to wrap it), but if you just watch a movie or something, time flies by.


Once I wrapped the wreath 2 or 3 times fully around, then it was finally time to decorate. I found a site for making felt flowers, which I will post instructions later if I can find my pictures, and used them to decorate. I also bought a twig that had sequins on it, from Micheal's, for less than a dollar, to add some bling and a play on natural.


All in all, it was an inexpensive craft. Probably less than $10 total for ALL the supplies. It was a little time consuming, but I was very happy with the results.

Crock Pot Turkey

Cook a turkey breast with vegetables in your crockpot for a healthy one dish meal!
Prep Time: 25 minutes
Cook Time: 7 hours
Total Time: 7 hours, 25 minutes
Ingredients:

2 onions, chopped
3 stalks celery, chopped
1 lb. baby carrots
1 Tbsp. chopped garlic
4-6 lb. boneless turkey breast, cut in half, thawed if frozen
1 tsp. dried thyme leaves
14 oz. can low sodium chicken broth
1/2 cup white wine or water
1/2 tsp. poultry seasoning
1/8 tsp. pepper

Preparation:
Spray a 4-6 quart crockpot with nonstick cooking spray. Place the onions, celery, carrots, and garlic on the bottom of the slow cooker. Put the turkey breast halves on top of the vegetables. Combine the thyme, chicken broth, wine or water, poultry seasoning, and pepper and pour over the turkey breast.

Cover crockpot and cook on low for 5-7 hours or until turkey is tender and meat thermometer registers 170 degrees. 8-10 servings

Pecan Pie Filling

Ingredients

1 cup light brown sugar
1/4 cup white sugar
1/2 cup butter
2 eggs
1 tablespoon all-purpose flour
1 tablespoon milk
1 teaspoon vanilla extract
1 cup chopped pecans

Directions

Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, beat eggs until foamy, and stir in melted butter. Stir in the brown sugar, white sugar and the flour; mix well. Last add the milk, vanilla and nuts.
Pour into an unbaked 9-in pie shell. Bake at 350 degrees for 15 min then reduce temp to 300 degrees and bake for 50 to 55 minutes, or until done.

Healthy Mac'N'Cheese

As I was going through my day I had a thought: home-made Mac and Cheese for dinner! On a cold rainy day this was the thought that stuck. So I did a little internet searching and found a "healthy mac and cheese" recipe, because it is always better to try the healthy alternatives :) We aren't 6 years old anymore ;) hehe
By the way... we LOVED this recipe!!! It turned out amazing and the flavor was delicious! The different textures complimented each other so well too! Oh! This is a repeat recipe FOR SURE!

Ingredients

3 tablespoons plain dry breadcrumbs, (see Tip)
1 teaspoon extra-virgin olive oil
1/4 teaspoon paprika
1 16-ounce or 10-ounce package frozen spinach, thawed
1 3/4 cups low-fat milk, divided
3 tablespoons all-purpose flour
2 cups shredded extra-sharp Cheddar cheese
1 cup low-fat cottage cheese
1/8 teaspoon ground nutmeg
1/4 teaspoon salt
Freshly ground pepper, to taste
8 ounces (2 cups) whole-wheat elbow macaroni, or penne





Preparation

Put a large pot of water on to boil. Preheat oven to 450°F. Coat an 8-inch-square (2-quart) baking dish with cooking spray.
Mix breadcrumbs, oil and paprika in a small bowl.


Place spinach in a fine-mesh strainer and press out excess moisture.
Heat 1 1/2 cups milk in a large heavy saucepan over medium-high heat until steaming.


Whisk remaining 1/4 cup milk and flour in a small bowl until smooth; add to the hot milk and cook, whisking constantly, until the sauce simmers and thickens, 2 to 3 minutes.

Remove from heat and stir in Cheddar until melted.

Stir in cottage cheese, nutmeg, salt and pepper.


Cook pasta for 4 minutes, or until not quite tender. (It will continue to cook during baking.) Drain and add to the cheese sauce; mix well. Spread half the pasta mixture in the prepared baking dish. Spoon the spinach on top.

Top with the remaining pasta; sprinkle with the breadcrumb mixture.


Bake the casserole until bubbly and golden, 25 to 30 minutes.


Tips & Notes

Make Ahead Tip: Prepare through layering the dish all the way through. Cover and refrigerate for up to 2 days or freeze for up to 3 months. Thaw in the refrigerator, if necessary, then bake for 35 to 45 minutes.

Tip: To make fresh breadcrumbs, trim crusts from whole-wheat bread. Tear bread into pieces and process in a food processor until coarse crumbs form. One slice of bread makes about 1/2 cup fresh crumbs. For dry breadcrumbs, spread the fresh crumbs on a baking sheet and bake at 250°F until crispy, about 15 minutes. One slice of fresh bread makes about 1/3 cup dry crumbs.

Or use prepared coarse dry breadcrumbs. We liked “Panko breadcrumbs.”

Try this: Uses for Olive Oil

Olive oil is not only great for cooking, it is also great around the house! From beauty to house maintenance... I have made a list of uses for Olive Oil! Try some out and let me know what you think!

Shaving for a close shave - Just put a little bit on olive oil on your legs and shave with your razor for a closer shave. Yay smooth legs!

Make-up remover - Put a little on a cotton ball and use to remove eye make-up! Great trick for when your product runs out!

Moisturizer - A little bit of olive oil on the skin will give you a natural moisturizer!

Soften cuticles - Put olive oil on a q-tip and swipe cuticles.

Shine/ Dust your wood - Put a little olive oil on a rag and rub into wood furniture. It gives it a nice shine and takes away dust.

Shine stainless steel - A little olive oil on a cloth and rubbing your stainless steel pots can give them an awesome shine!

Loosen your jean zipper
When you pant's zipper gets stuck and has trouble moving up and down, put a little olive oil on a q-tip and rub on zipper track. Then move the zipper up and down and it should loosen right up!

Get wax off candles Pour a little olive oil into a candle holder that has some candle wax you want to get rid of. After a little soak, a lot of the wax will slide off!

No more hair balls Now if you are a cat person, this one is for you. 1/4 tsp of olive oil in the cat's food = no more hair balls! yay!

Squeaky door fix - Squeaky door? Put a little olive oil on a q-tip and rub into the hinges for no more squeak!

Super Shine, DIY style: A whole lotta olive oil and a tbsp of honey. Mix it up and work it through your hair. Leave in for at least half an hour - overnight’s even better. Result: Gleaming, soft, smooth, totally non-staticky hair!

Mug Brownie

If you like simple, easy clean up, individual servings, and ooey-gooey warm brownies... the I have the recipe for you!!!!!!!!!!! This recipe is simple and easy and we looooooove it! It may even replace our Thanksgiving pie plans!!!! haha I said MAY... maybe I will just do both ;)

Ingredients:
4 Tablespoons Flour
4 Tablespoons Sugar
2 Tablespoons Cocoa powder (Note: don't use cocoa mix or quik, it shouldn't have any sugar)
2 Tablepsoons Vegetable Oil (Don't use one with a strong flavor, eg olive, sesame, etc)
2 Tablespoons Water
Dash of salt
Mug
Microwave



Directions:
Add the sugar, flour, cocoa, and salt to the mug and mix. Then add the oil and water and mix the dry and wet ingredients together. Be sure to be thorough, there's a tendency for clumps of the dry ingredients to form.


Microwave on high for roughly a minute. You may have to microwave it longer or shorter, depending on your microwave, but the brownie should still be wet in the center when done.


It's done! Let it cool, grab a spoon, and dig in straight from the mug.

This was my first attempt, which I made one afternoon for just me. If the recipe failed... I didn't want to give my Husband false hope of a delicious dessert!

...and since it didn't fail (and was sooo delicious I just HAD to share!) This is the one I made for him the following night! Another success! And it got his seal of approval! As well as mine! I didn't have to do dishes AND got to eat my "cake" too!

I recommend adding a scoop of ice cream for maximum deliciousness!!!!!!!

Baked Apple Chips

Ingredients:
2 apples
Cinnamon


Directions:
Thinly slice the entire apple. Remove apple core (I used a bottle cap to get the perfect circle)!


Line a cookie sheet with parchment paper and place apple slices on it.
Sprinkle with cinnamon.


Bake at 275 degrees for 1-1.5 hours. After about the first 40 min, flip them over so they bake evenly.


Mine turned out a little crispy.... I forgot to set the timer so they cooked longer! But still tasted alright AND the best part? My house smelled heavenly while baking these healthy snacky apples!

Home is where the Heart is

This is a drawing that I did one afternoon. I drew a map of the United States and then drew hearts for each of the places me and my husband have lived (either together or apart). Then I labeled the places. I created a sign on a piece of wood (from our wedding!) saying: Home is where the ♥ is! and put a ribbon through it to hang it up. It really turned out cute, and is a great memento of where life has taken you as a couple, and where you are together today!

These are just a sample of some drawings I did one afternoon. A lot of them, I looked on some etsy.com sites and found inspiration and tried to draw the picture I saw.




New Zealand Finch Painting

My mom had two New Zealand Finches named Ozzie and Matilda Moto. She has them for a number of years, and just this year, they passed away. I wanted to do a painting for her in memory of The Motos.
I outlined with a fine tip marker and then watered down acrylic paints to create a water color look.

Wedding Photo Collage

From the wedding, I had four cork boards. They were used as my escort cards holder. I decided to hang them in the dining area with the word: LOVE. Then I printed black and white pictures from our wedding day (free prints from Walgreens!) and used little wooden pins to secure them to the ribbon that was already on there. It is fun to eat dinner and talk about our wedding :)



Bird Silhouette Painting

I am always trying to understand "my style" in life. With music, I've given up trying because although I do have a couple artists I favor... the minute I find a genre that fits "my style", I am surprised with a completely different sounding song that I LOVE. Eclectic? I guess that is the only way to fully describe my music taste.
But I think I am more consistent in my Home decor style. And I've decided to name it "Natural Modern". I love natural fabrics (burlap, canvas, woods), and I love the nature aspect (birds, trees, leaves, flowers). But I also enjoy bold prints and color.

Anyways, this painting is one that I created a while ago, and took a picture of recently. I think it fits "my style" completely! And, "shadow birds" (as I call them) seem to be the "in" trend right now. Love it!



I painted the canvas cream, then did small brown horizontal strokes in brown and blended them in.
Next, I did a dappling technique around the edges of the canvas with the paint brush, and also used a paper towel when I wanted more muted tones. I used reds, yellows, browns, oranges, and even a little blue.
Then I painted a branch across the bottom of the canvas, then the two birds.

A lot of this painting was to taste. Playing with different techniques and using different brushes helped.
And remember, if you "mess up"... you can always dry it and paint over it! The beauty of canvas painting :)

Spaghetti Squash

I have been hearing a lot about Spaghetti Squash lately. And honestly, I never knew it existed till now! So, we thought we would try it out. I mean... it sounds like a win-win situation: Cut out the carbs but keep the integrity of the meal. This is what we tried:

Ingredients:
1 spaghetti squash
Coarse salt and ground pepper and cinnamon
garlic

Directions:
Cut squash in half and clean out the center and seeds. Place cut side up in a baking dish that is microwave safe. Poke flesh of squash with a fork, about 7 times. Season with salt, pepper and cinnamon and then place in the Microwave. Bake squash for 6-8 minutes or until tender enough to stick a fork into it with minimal resistance. Remove from microwave and allow it to cool a little.
Scrape flesh into strands by dragging your fork long ways.



In a large skillet, heat oil over low heat. Add garlic; cook until fragrant and just starting to color, about 5 minutes. Add squash; season with salt and pepper. Cook, tossing frequently, until squash is very hot, about 5 minutes.
Heat up your favorite canned marinara and serve on top!



All in all, I found it alright. Still missed my noodles (I am addicted to carbs... I know...) but it was a good alternative. My husband loved it and said he barely missed the noodles at all! I would love to try another recipe, maybe try cooking the squash in the oven next time? Easy One-Pot Lasagna

Ok. I get my recipes from every where... family, friends, online... coupons?!? Yes! Even coupons have sources! I had this coupon for a tomato sauce that contained omega-3 and a bunch of other healthy stuff, and attached to it was a recipe for One Pot Lasagna! After reading through the recipe, I thought it was worth a shot, and found it, It was a winner!!!!! My husband had multiple servings and even offered to have me cook this for him if I had to leave town and I didn't want him to starve/ eat unhealthy... wow, how kind of him? hehe I don't mind! This recipe DOES use one pot (well, one pot and a cauldron to cook with... but I don't mind washing the cauldron. But this recipe also uses a pan to cook the lasagna in... ah, but one pot I guess is technically correct!)Needless to say, the cleaning isn't so bad, and neither is the cooking. Chalk one up for recipes found on coupons! This one is a winner with us!

Preparation time: 15 minutes
Cooking time: 30 minutes

Ingredients:

12 ounces NO YOLKS (prefer Dumplings)
1 ½ tablespoons unsalted margarine
1 ½ tablespoons flour
1 cup fat-free half-and-half or milk
½ teaspoon salt (if desired)
¼ teaspoon pepper
½ teaspoon crushed dried oregano
1 cup reduced-fat ricotta cheese
1/2 cup shredded Parmesan cheese
¼ cup liquid egg equivalent
1 cup Healthy Pasta Sauce (Francesco Rinaldi ToBe Healthy Tomato & Basil)or any kind of pasta sauce
2 cups spinach
1/4 cup red onion, diced
1/2 cup mushrooms, diced (optional)
1 cup shredded, reduced-fat mozzarella cheese

Preparation:

Preheat oven to 350 degrees. In large pot, cook NO YOLKS according to package directions. Drain into colander.


In the same pot, melt margarine. Stir in flour to form a paste.
Gradually stir in half-and-half (or milk) over low heat, until mixture thickens. Stir in salt, pepper and oregano. Stir in ricotta cheese, Parmesan cheese and liquid egg equivalent.


Stir in cooked NO YOLKS. Remove from heat.


Grease a large, casserole dish, about 10 inches in diameter (or 8" x 8" square). Spoon in No Yolks mixture.


Bake for 10 minutes. Remove from oven. Spread ToBe Healthy Pasta Sauce over noodle layer. Add spinach, onion and mushrooms to top. Sprinkle on mozzarella cheese.


Return casserole to oven and bake an additional 20 minutes or until cheese melts and casserole is set. Remove from oven. Set aside 5 minutes before serving.

Yummmmm! Healthy AND easy clean up!

Makes 6 (approx. 1-cup) servings

Striped. Noticed I kept the same color pallet with a detailed print and a bold stripe. Then your pillows won't clash.

Since this is my first time making pillow covers, I miscalculated how much I would need. So, to remedy this, I made reversable pillows. One side is flowery, one side is striped. This made three pillows, which I think things in odd numbers are better for decorating any ways :)


I had these pillow inserts from an old set of pillows, so I am re-purposing! Making pillows is a great way to make a room your own!

Measure the amount of fabric needed to fit the pillow. It should be snug, but not tight.


Use your pinning needles to keep the fabric together, and to give your self a good line to follow while sewing.


Sew away! This is my new sewing machine and boy is it AWESOME! Before I had it, I tried sewing by hand... I finished one side of the pillow then vowed to not finish the pillow without my machine!!!! Technology is awesome :)

I sewed three sides of the pillow, and left one open. Turn the sewn fabrics inside out, you will see a nice seamless edge! What a reward!


Then stuff the pillow inserts inside. On the side that's open, fold the fabric in, so that you can see the pattern inside the pillow, and stick one side of your Velcro to one fabric side, and the other side of the Velcro to the other fabric side. Press Velcro together to seal up your pillow and creating a flawless seam.

Set on couch and ENJOY!
