I have been hearing a lot about Spaghetti Squash lately. And honestly, I never knew it existed till now! So, we thought we would try it out. I mean... it sounds like a win-win situation: Cut out the carbs but keep the integrity of the meal. This is what we tried:
Ingredients:
1 spaghetti squash
Coarse salt and ground pepper and cinnamon
garlic
Directions:
Cut squash in half and clean out the center and seeds. Place cut side up in a baking dish that is microwave safe. Poke flesh of squash with a fork, about 7 times. Season with salt, pepper and cinnamon and then place in the Microwave. Bake squash for 6-8 minutes or until tender enough to stick a fork into it with minimal resistance. Remove from microwave and allow it to cool a little.
Scrape flesh into strands by dragging your fork long ways.
In a large skillet, heat oil over low heat. Add garlic; cook until fragrant and just starting to color, about 5 minutes. Add squash; season with salt and pepper. Cook, tossing frequently, until squash is very hot, about 5 minutes.
Heat up your favorite canned marinara and serve on top!
All in all, I found it alright. Still missed my noodles (I am addicted to carbs... I know...) but it was a good alternative. My husband loved it and said he barely missed the noodles at all! I would love to try another recipe, maybe try cooking the squash in the oven next time?
